Autumn always makes me think of seasonally inspired food.  I always look forward to Pumpkin Spice lattes at Starbucks.  Just this morning, I saw a commercial for the new Pumpkin White Chocolate number at Dunkin’ Donuts.  The name alone is tempting enough to make this non-DD drinker stop by the nearest shop.  To go along with either of these midday pick-me-ups, a fall inspired lunch is in order.

From Bon Appétit on epicurious.com, Roasted Squash with Mint and Toasted Pumpkin Seeds is a perfect autumn lunch.  It takes little than 30 minutes to prepare and is a healthy, low-calorie choice as well.  Ingredients include squashes (or sugar pumpkins), olive oil, salt and pepper, pumpkins seeds, balsamic vinegar, and mint leaves.
